Gluten-free & Vegan Blueberry Cheesecake Bites

Ingredients

Graham Cracker Crust:

Partake Classic Graham Crackers 4 tbsp unsalted vegan butter, melted

Cheesecake Filling:

12 ounces vegan cream cheese 1/3 cup sugar 1/4 cup vegan vanilla yogurt 1/2 tsp vanilla extract

Blueberry Topping:

3/4 cup blueberries 1 1/2 tbsp sugar 1 tbsp water 2 tsp water plus 1 tsp cornstarch, mixed together

Instructions

  1. Preheat the oven to 325 degrees and line a muffin pan with cupcake liners. Set aside.
  2. Place graham crackers into a blender and pulse until fine crumbs. Pour the crumbs into a medium-sized mixing bowl and add the melted butter. Mix together.
  3. Add the graham cracker crumbs into the cupcake liners, pressing down firmly. Bake for 5 minutes and set aside.
  4. Combine the blueberries, sugar, and 1 tbsp of water in a small saucepan and cook over medium heat for 5 minutes. Once boiling, add the water + cornstarch mixture to the pan. Stir and cook for another minute. Remove from heat and set aside.
  5. In a separate bowl, mix together cream cheese and sugar until smooth. Add in the yogurt and vanilla extract until well combined.
  6. Evenly distribute the cheesecake filling into the cupcake liners, covering the graham cracker crust. Bake for 15-17 minutes, or until the tops of the cheesecakes are firm.
  7. Allow the cheesecakes to cool and place in the refrigerator to chill for 3 hours.
  8. Top the chilled cheesecakes with the blueberry topping and enjoy!
